RECIPES

Meatballs
– Approx 800g minced meat
– 2 eggs
– 2 tbsp plain yogurt (I use coconut)
– Approx 1/2 tsp onion, garlic and oregano powder

Heat oven to 180’c / 350’f
Combine all ingredients except meat, stir
Add in meat, gently mix together
Form into golf-size balls
Bake in oven for about 30 mins

Cauliflower
– 1 cauliflower
– Olive oil
– Salt

Sauce:
– 3 big Tbsp tahini
– 1 Tbsp maple syrup
– Juice of 1 lime
– Salt to taste
– Water to thin

Boil cauliflower in salted water 5-6mins.
Remove from water, allow to dry and cool for few mins
Rub the cauliflower with sprinkle of oil and salt
Bake at 225C/450F for 45mins
Pour sauce on top, sprinkle with fresh parsley

Thai noodle soup
– Carrot
– Zucchini
– Red bell pepper
– Mushrooms
– Ginger
– Garlic
– Chicken
– Chicken stock
– Brown rice noodles (can be any variety)
– Coconut milk
– Thai curry paste
– Serve with fresh cilantro and lime juice

1. Sautee garlic, ginger, carrots, bell pepper, zuchinni – for about 5-7 mins
2. Add in chicken stock, chicken, curry paste – cook for 10-15 minutes or until the chicken is cooked through.
3. Add the coconut milk, baby spinach, lime juice. Stir to combine until the spinach has wilted.
4. Cook noodles in a separate pot
5. Pour soup over noodles
6. Serve with fresh cilantro and lime juice
