You can add or leave out any spices you like, but I think it is perfect with the mix of spices they suggest in the recipe. A scrumptious treat!!!
And here is the recipe:
(I doubled it in the video so that it would fill one of my larger cake tins…)
7 teaspoon of instant coffee powder
200g sugar
40g cocoa powder
175g sultanas
Simmer these ingredients and let cool down.
65g icing sugar
1 sachet of vanilla flavoured sugar (a German speciality, use a few drops of vanilla essence instead)
3 eggs
1 pinch of salt
1 tea spoon cinnamon powder
1 teaspoon ground nutmeg
1teaspoon ground cloves
1 teaspoon ground cardamom
1 tablespoon rum
Mix these ingredinets, then fold in
250g flour
1 teaspoon baking powder
Add cool sultana-coffee mix.
Put in greased tin and bake for 30 minutes at 160C.
For the topping:
Mix 250g icing sugar with 3 teaspoon coffee powder and 3-4 tablespoon of hot water into a creamy paste. Spread on cake and decorate if you like.
